
1 / 2 liter milk
5 egg yolks
1 teaspoon of starch
Cinnamon
Lemon peel
5 tablespoons sugar
Development
Heat the milk with cinnamon and lemon rind.
Beat the egg yolks with sugar. Add the starch diluted in a little milk.
Pour the milk over the yolks, churning.
Put the above mixture to heat, without boiling, until thickened. Gently stirring constantly ( Very important ! ).
Distribute in earthenware dishes and let cool. Put a layer of sugar and burn with a shovel (put it red in the fire.)
