
Ingredients for 6 serves
1kg yoghurt
2 tbsp almonds
2 tbsp unsalted pistachios
½ tsp. ground cardamom
½ tsp. saffron, dissolved in a little warm water
2 tbsp rosewater
100g honey
1.- Pour yoghurt into the middle of a large piece of muslin, gather the corners together and tie them with a string or a rubber band and hang the muslin over a bowl for 2 -3 hours to drain off the excess water.
2.- Meanwhile, drop the nuts in boiling water and cook for about 1 minute. Drain them well and rub off the skins with a cloth.
3.- Turn yoghurt into a bowl, add honey and mix the two together thoroughly.
4.- Stir in cardamom, saffron and rosewater. Turn into a large bowl or individual bowls and sprinkle with the nuts.
5.- Serve chilled.
Shrikhand is an Indian sweet dish made of strained yogurt. It is one of the main desserts in Gujarati cuisine and Maharashtrian cuisine. Preparation of this dish is very simple but it takes some time to process yogurt properly.
A popular variation of shrikhand in Maharastra is Amrakhand , which is shrikhand mixed with mango pulp and made homogeneous with a blender. In a few parts of Gujarat, another variant of shrikhand, Matho , is also very popular and served as a sweet dish or dessert. The preparation method is almost the same, but some fresh fruits are always added in Matho.
