
500 g flour of almond (ground almond)
500 g sugar
1/2 -1 cup water
1 small potato
grated peel of 1 lemon
1.- Boil the potato with skin. Peel it and do it puree well fine with a fork. Leave to cool.
2.- Add the sugar, the almond, the water and the skin of lemon. Mix with the fork until you obtain a homogeneous mass.
3.- Separate balls of the mass (as a walnut's size). Pass them for white of egg and dip it in batter afterwards with the pine nuts. Paint the balls with yolk of egg.
4.- Warm oven up to the utmost. Putting the panellets in the tray covered of butter or using one of silicone. Bake the panellets among 6 at 10 minutes. Leave to cool before eat.
These cookies are traditionally served for All Saints Day on November 1st, in Catalonia and served with moscatel or "cava catalan sparkling wine. Pine nuts can be substituted for the chopped almonds. Cocoa powder, coffee or cinnamon can also be added to the mixture to change the taste. The most popular type is the one rolled in pine nuts.
