Tomato and Mozzarella Salad


 
 

Ingredients for :

2 ripe beef tomatoes
150 gms fresh Mozzarella
few spinach sprouts
few, torn into pieces fresh basil leaves
20 black olives or black olive paté
fresh crusty bread to serve
For the Dressing:
4 tblsp olive oil
1 1/2 tblsp white wine vinegar
1 tsp coarse-grain mustard
salt and pepper as required

Preparation


1.- Cut the tomatoes into slices and place in a large serving dish.

2.- Drain the mozzarella and cut into slices.

3.- Then arrange the mozzarella cheese with the tomatoes as in the picture, and add spinach sprouts over.

4.- To make the dressing, mix the oil, vinegar and mustard together in a small bowl, add salt and pepper to taste, then drizzle over the salad.

5.- Scatter the basil and olives or olive paté over the top and serve immediately with fresh crusty bread.
